By now, I think we have all tried the classic avocado toast combination. With so many different options of toppings, you can't go wrong with this simple and delicious meal!

Let me introduce you to the best bread I have ever tried for avocado toast AND my favorite way to add the avocado.

The brand Food for Life makes gluten free, dairy free, no added sugar, and vegan bread. Now I know what you're thinking... with all that missing, how can this bread be so good?! I don't know how to they do it, but the brown rice bread and the multi seed rice bread is TOO GOOD! Make sure to toast it on the highest toaster setting twice and it is ready!

I've only been able to find this bread at Whole Foods in the freezer section, but please let me know if they sell it elsewhere! I also LOVE this brand's English muffins for egg sandwiches or just adding avocado to as well.

Now let me tell you about my favorite method of adding avocado; mash one half of an avocado in a bowl with juice from half of a lemon, salt, pepper, and the Everything But the Bagel seasoning from Trader Joe's. Mix together and add onto your toast (this mixture is enough for two pieces of the rice bread). I love everything with an added spice, so I add red pepper flakes and even some Cholula on top.

I crave this combination every day for breakfast or lunch. I also love adding a poached egg for some added flavor. My go-to combo for the summer has been adding Roma tomatoes and red onion to my toast with some microgreens (gotta get in those greens whenever you can!). If I'm having avocado toast for lunch, I like adding a salad with all my favorite veggies for a more filling option.

Yield: 1 person

Ingredients:

  • 1/2 ripe avocado

  • 1/2 lemon

  • Salt

  • Pepper

  • Everything But the Bagel seasoning from Trader Joe's (optional)

  • Red pepper flakes (optional)

Directions:

  1. If using Food for Life rice bread, toast your two slices of bread on high TWICE!

  2. In the meantime, mash your avocado in a small bowl, squeeze the lemon juice, salt, pepper, and your (optional) choice of other seasonings. Mash together with a fork and spread on the toast.

  3. Add an egg, tomatoes, onion, or anything else you may like! Or simply enjoy it the way it is!
